Instructions:
- Prepare Slow Cooker: If using a slow cooker liner, place it in your slow cooker.
- Add Chicken & Broth: Place the frozen chicken breasts in the bottom of the slow cooker. Pour the chicken broth over the chicken.
- Add Seasoning & Creamy Base: Sprinkle the homemade Savoury Herb seasoning blend over the chicken. Spoon the fat-free soft cheese or fat-free natural Greek yogurt on top of the chicken breasts.
- Cook: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is cooked through and easily shredded.
- Shred Chicken: Once cooked, remove the chicken breasts from the slow cooker onto a plate or cutting board. Using two forks (or shredding claws), shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker with the creamy sauce.
- Stir in Cheese and Bacon: Add the cooked, crumbled lean bacon and the grated reduced-fat cheese to the slow cooker. Stir everything together until the cheese is melted and well combined with the chicken and sauce. The sauce should be thick and creamy.
- Prepare Sides: While the chicken is cooking or just before serving, steam or boil your fresh broccoli florets until tender-crisp. Prepare your side salad with your preferred greens and any other vegetables.
- Serve: Serve generous portions of the creamy shredded chicken alongside the steamed broccoli and a fresh green salad.
