Creamy Shredded Chicken with Savoury Toppings (Slow Cooker Method)

Instructions:

  1. Prepare Slow Cooker: If using a slow cooker liner, place it in your slow cooker.
  2. Add Chicken & Broth: Place the frozen chicken breasts in the bottom of the slow cooker. Pour the chicken broth over the chicken.
  3. Add Seasoning & Creamy Base: Sprinkle the homemade Savoury Herb seasoning blend over the chicken. Spoon the fat-free soft cheese or fat-free natural Greek yogurt on top of the chicken breasts.
  4. Cook: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is cooked through and easily shredded.
  5. Shred Chicken: Once cooked, remove the chicken breasts from the slow cooker onto a plate or cutting board. Using two forks (or shredding claws), shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker with the creamy sauce.
  6. Stir in Cheese and Bacon: Add the cooked, crumbled lean bacon and the grated reduced-fat cheese to the slow cooker. Stir everything together until the cheese is melted and well combined with the chicken and sauce. The sauce should be thick and creamy.
  7. Prepare Sides: While the chicken is cooking or just before serving, steam or boil your fresh broccoli florets until tender-crisp. Prepare your side salad with your preferred greens and any other vegetables.
  8. Serve: Serve generous portions of the creamy shredded chicken alongside the steamed broccoli and a fresh green salad.

Enjoy this flavourful and satisfying meal, knowing it supports your healthy eating goals!
