Ingredients:
- Low-calorie cooking spray
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 10 oz (approx. 280g) mushrooms, sliced
- 10 oz (approx. 280g) fresh spinach leaves, roughly chopped
- 500g plain quark (or fat-free natural yogurt)
- 1 vegetable stock cube, made up with a little hot water (about 50-75ml)
- Dried lasagne sheets
- Optional: 25g reduced-fat Cheddar cheese, grated (note this will add to the overall calorie/fat content)
- Salt and pepper to taste
