Creamy Spinach & Mushroom Lasagna

Ingredients:

  • Low-calorie cooking spray
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 10 oz (approx. 280g) mushrooms, sliced
  • 10 oz (approx. 280g) fresh spinach leaves, roughly chopped
  • 500g plain quark (or fat-free natural yogurt)
  • 1 vegetable stock cube, made up with a little hot water (about 50-75ml)
  • Dried lasagne sheets
  • Optional: 25g reduced-fat Cheddar cheese, grated (note this will add to the overall calorie/fat content)
  • Salt and pepper to taste
