Instructions:
- Preheat your oven to 190°C (fan 170°C/gas 5).
- In a large bowl, combine the dry ingredients (flours, baking powder, and salt). Using your fingertips, rub the spread into the dry mix until it resembles breadcrumbs.
- If making flavored scones, add the chosen additional ingredients (Parmesan cheese, paprika, herbs, etc.) to the dry mix at this point.
- In a separate bowl, whisk together the egg and yogurt.
- Gradually add the wet mixture to the dry ingredients, using a knife to gently fold it in until a soft dough forms.
- Add a splash of water if the dough feels too dry.
- Lightly flour a clean surface and gently roll out the dough to about 1/2 inch thickness.
- Try to handle the dough as little as possible to maintain a light and fluffy texture.
- Use a 6cm round cookie cutter to cut out 8 scones from the dough. Gently gather any scraps and re-roll to cut out a few more scones. Let the scones rest on a baking sheet for 5 minutes.
- Preheat a baking sheet with a light spray of low-calorie cooking spray. Transfer the scones to the baking sheet and brush them with the skimmed milk.
- Bake the scones for 12 minutes, or until golden brown and firm to the touch.
- Let the scones cool slightly before serving. Enjoy them plain, sliced in half and filled with yogurt and fresh fruit, or spread with a thin layer of low-fat cream cheese.
In An Air Fryer:
- Preheat your air fryer to 375°F (190°C).
- Rest: Place the scones on a baking sheet lined with parchment paper and let them rest for 5 minutes.
- Prepare air fryer basket: Lightly spray the air fryer basket with cooking spray.
- Bake: Transfer the scones to the air fryer basket and brush the tops with the skimmed milk. Bake for 10-12 minutes, or until golden brown and firm to the touch.
- Cool and serve: Let the scones cool slightly before serving. Enjoy them plain, with jam and cream, or topped with your favorite toppings.
