Golden Squash Gratin Bites

Instructions:

  1. Prepare the Squash: Wash the yellow summer squash thoroughly. Using a sharp knife, slice the squash into rounds approximately ¼-inch thick.
  2. Season the Slices: In a large mixing bowl, combine the sliced squash with the cooking oil, garlic powder, dried herb blend, salt, and black pepper. Toss gently until all the squash pieces are evenly coated.
  3. Arrange and Top: Line a baking sheet with parchment paper. Arrange the seasoned squash slices in a single layer on the prepared sheet. Evenly sprinkle the shredded mild white cheese and the grated hard aged cheese over the top of each squash round.
  4. Bake to Perfection: Preheat your oven to 400°F (200°C). Place the baking sheet in the preheated oven and bake for 20 to 25 minutes, or until the cheese is melted, bubbly, and the edges of the squash are slightly golden.

Optional Enhancements:

  1. For an extra touch of flavor, sprinkle with a small amount of freshly chopped flat-leaf parsley or a pinch of red pepper flakes after baking.

Serving Suggestion:

  1. Serve warm as a delightful vegetable side dish or a wholesome snack.
