Ingredients

  • Cocoa powder: 1 level tbsp (reserve a pinch for garnish)

  • Cornflour: 2 level tbsp (for the perfect thick consistency)

  • Sweetener: 3 level tbsp sweetener granules

  • Egg yolks: 5 large (provides a rich, silky texture)

  • Skimmed milk: 400ml

  • Vanilla extract: ½ tsp

  • Dark chocolate: 20g plain chocolate (at least 70% cocoa), roughly chopped

  • Fresh raspberries: 250g (save a few for decorating)
