For the salsa:
- 400g cherry tomatoes, chopped
- A handful of fresh coriander, chopped
- 1-2 red chili peppers, finely chopped
- 2-3 limes, cut into wedges
For the fajitas:
- 3 bell peppers (any color), deseeded and sliced
- 1 ½ large red onions, finely sliced
- 150g button mushrooms, sliced
- 3 sprigs of thyme
- ½ red chili pepper, finely chopped
- 1 teaspoon smoked paprika
- 1 teaspoon cumin seeds
- 4 cooked skinless and boneless chicken breasts or leftover cooked chicken
- Whole lettuce leaves (little gem, round, or small cos)
