  • 1 ½ cups low-fat cottage cheese
  • 4 large eggs
  • ¼ cup skimmed milk (or unsweetened almond milk)
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp red pepper flakes (optional)

For the Topping:

  • 2 oz / 55g crumbled light feta cheese
  • Optional: A small sprinkle of light mozzarella

Optional Garnish:

  • Fresh parsley or basil, chopped
  • Lemon wedges, for serving
