Refreshing Apple Carrot Salad

  1. Prepare the Salad: Place the matchstick-cut carrots, apples, red onion (if using), and sliced fresh grapes into a large bowl. Drizzle immediately with the lemon juice and toss gently but thoroughly.

  2. Add Flavour: Stir in the chopped parsley.

  3. Make the Dressing: In a separate small bowl, whisk together the fat-free natural Greek yogurt, cider vinegar, sweetener, salt, and pepper until the dressing is smooth. Add an extra tablespoon of yogurt if you prefer a creamier coating.

  4. Combine: Pour the dressing over the salad mixture and toss until all the ingredients are evenly coated.

  5. Chill and Serve: Cover the salad and refrigerate for 30 minutes to an hour before serving for the best, most refreshing flavour.
