Refreshing Apple Carrot Salad 

Ingredients (All Free Foods)

 

For the Salad Base:

  • 4 large Carrots, peeled and cut into thin matchsticks (julienned)

  • 3 medium Apples (Granny Smith or another crisp variety), cored and cut into thin matchsticks (increased apple for extra volume)

  • 1/2 cup thinly sliced Seedless Grapes (any colour) – Replaces the cranberries

  • 1 tablespoon fresh Lemon Juice

  • 1 tablespoon finely chopped Red Onion (or chives), optional

  • 1 tablespoon chopped fresh Parsley

For the Syn-Free Dressing:

  • 4-5 level tablespoons of Fat-Free Natural Greek Yogurt

  • 1 teaspoon Cider Vinegar

  • Sweetener, to taste (optional)

  • Salt and freshly ground Black Pepper, to taste
