For the Salad Base:

4 large Carrots, peeled and cut into thin matchsticks (julienned)

3 medium Apples (Granny Smith or another crisp variety), cored and cut into thin matchsticks (increased apple for extra volume)

1/2 cup thinly sliced Seedless Grapes (any colour) – Replaces the cranberries

1 tablespoon fresh Lemon Juice

1 tablespoon finely chopped Red Onion (or chives), optional

1 tablespoon chopped fresh Parsley
For the Syn-Free Dressing:

4-5 level tablespoons of Fat-Free Natural Greek Yogurt

1 teaspoon Cider Vinegar
