Speedy & Light Mashed Potato Muffins

Ingredients:

  1. 3 large potatoes (suitable for mashing, like Russet or Maris Piper)
  2. Generous amount of vegetables (at least half the volume of the potatoes):
  3. 3 cloves garlic, finely chopped
  4. 1 small onion, finely chopped
  5. ½ cup peas
  6. ½ cup carrots, finely diced
  7. 2 tbsp green onion, finely chopped
  8. Optional additions: Broccoli florets (finely chopped), spinach (chopped), mushrooms (finely chopped), bell
  9. peppers (finely diced)
  10. ½ teaspoon Italian seasoning
  11. Salt and pepper, to taste
  12. Fresh parsley, chopped, for garnishing
  13. Optional (use sparingly and consider their calorie/fat content):
  14. 1-2 tbsp low-fat natural yogurt or quark
  15. 1-2 tbsp nutritional yeast (for a cheesy flavor)
