- Step 1: Crafting the Cracker Dough
Combine Dry Goodness: In a large bowl, whisk together the wholemeal flour, ground linseeds, salt, garlic granules, onion granules, and black pepper. - Add Wet Ingredients: Create a well in the center of your dry mix. Pour in the olive oil and water. Use a spatula or your hands to mix until a shaggy dough forms. If it seems too dry, add a tiny bit more water, one teaspoon at a time, until it comes together.
- Knead and Rest: Turn the dough out onto a lightly floured surface. Knead for about 2-3 minutes until it’s smooth and pliable. Form it into a ball, wrap it in cling film, and let it rest for at least 30 minutes. This rest makes it much easier to roll!
- Step 2: Baking Your Crispy Crackers
Preheat & Prepare: Preheat your oven to 175°C (350°F) and line a baking tray with baking parchment. - Roll Thin: On a lightly floured surface, roll out the dough as thinly as you can, aiming for about 1/8 inch thick. The thinner it is, the crispier your crackers will be!
- Cut & Top: Use a pizza cutter or a sharp knife to cut the rolled dough into squares or your preferred shapes. If using, sprinkle your chosen seeds over the top and gently press them in.
- Bake to Perfection: Carefully transfer the cut cracker shapes onto your prepared baking tray. Bake for 15-20 minutes, or until they’re golden brown and wonderfully crisp. Keep a close eye on them to prevent burning.
- Cool Down: Once baked, remove the crackers from the oven and let them cool completely on a wire rack. This is key for maximum crispiness!
- Step 3: Whipping Up the Creamy Dip
Smooth Base: In a medium bowl, combine the fat-free natural cream cheese and fat-free natural Greek yogurt. Whisk or use a hand mixer until the mixture is smooth and creamy. - Flavour Boost: Stir in the finely chopped spring onions, dried chives, garlic granules, salt, and pepper. Give it a taste and adjust the seasonings to your liking.
- Chill for Flavor: For the best taste experience, cover the dip and pop it in the fridge for at least 30 minutes. This allows all those lovely flavors to blend beautifully.
- Step 4: Serve and Enjoy!
Arrange your cooled, crispy homemade crackers on a platter alongside a bowl of the creamy onion and chive dip. Dive in and enjoy this delicious, healthier snack!
