Preheat your oven to 180 degrees. Spray a large baking tray with Low Calorie Cooking Spray.
Dice your chicken into even pieces.
In a bowl, mix together the Smash, OXO Cube, salt, pepper and Five Spice.
Whisk the eggs in a separate bowl.
One by one, dip the pieces of chicken into the whisked egg and then into the Smash mix, rolling to ensure that each piece is fully coated. Place evenly on your baking tray.
Spray with more Low Calorie Cooking Spray and bake in the oven for 20 minutes, or until golden brown on both sides.
Meanwhile, mix the orange juice, chicken stock, soy sauce, sugar, honey and five spice in a saucepan over a medium heat.
Bring to a simmer and then add the Xanthan Gum. This will go lumpy at first, but whisk it into the sauce as it bubbles and over time it will dissolve.
Simmer, whisking occasionally, until the sauce thickens and becomes sticky. Taste and add more Five Spice or Soy Sauce if desired.
Once the chicken is cooked, add the crispy pieces the the sauce pan and mix until each piece is coated.
Serve with a topping of sesame seeds and sliced spring onions, with whatever sides you fancy.
