Instructions
Step 1: Mix Wet & Dry
- Preheat your oven to 180°C (350°F).
- In a medium bowl, mash the banana and mix in the egg and fat-free Greek yogurt.
- Add the oats, baking powder, and a pinch of salt. Stir until just combined.
- Lightly fold in half of the 5g of white chocolate chips.
Step 2: Bake and Top
- Lightly spray a small dish (ramekin) with low-calorie cooking spray. Pour in the batter.
- Crumble the half Speculoos cookie and sprinkle it over the batter.
- Top with the remaining half of the white chocolate chips.
- Bake for 20 to 25 minutes, until set and golden.
