Step 1: Mix Wet & Dry

  1. Preheat your oven to 180°C (350°F).
  2. In a medium bowl, mash the banana and mix in the egg and fat-free Greek yogurt.
  3. Add the oats, baking powder, and a pinch of salt. Stir until just combined.
  4. Lightly fold in half of the 5g of white chocolate chips.

Step 2: Bake and Top

  1. Lightly spray a small dish (ramekin) with low-calorie cooking spray. Pour in the batter.
  2. Crumble the half Speculoos cookie and sprinkle it over the batter.
  3. Top with the remaining half of the white chocolate chips.
  4. Bake for 20 to 25 minutes, until set and golden.
