Method

  1. Cook Pasta: Cook the dried pasta according to the package instructions until al dente. Drain well, but be sure to reserve about 1 to 2 tablespoons of the starchy cooking water.

  2. Sauté Aromatics: While the pasta is cooking, spray a deep non-stick frying pan with cooking oil spray and place it over a medium heat. Add the spring onions, chilli, and garlic. Stir-fry for 1-2 minutes until fragrant.

  3. Add Vegetables: Introduce the chopped fresh tomatoes (or the canned chopped tomatoes) and the drained sweetcorn kernels to the pan. Cook this mixture for 2-3 minutes, allowing the tomatoes to soften slightly.

  4. Incorporate Tuna: Stir in the drained and flaked tuna. Continue to cook for another 2-3 minutes, heating the tuna through.

  5. Combine and Serve: Add the drained pasta and the reserved cooking water to the tuna mixture in the pan. Toss everything together vigorously until the pasta is coated and the reserved water creates a light sauce.

  6. Finish: Season the dish to taste with salt and pepper. Scatter with chopped fresh dill, if using, and serve immediately alongside a fresh green salad.
