Ingredients:

  • For the Cake:
  • 200g low-fat spread suitable for baking (such as a light margarine)
  • 6 level tablespoons of granulated sweetener
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 200g self-raising flour
  • For the Cream Topping & Filling:
  • 200g plain quark or fat-free Greek yogurt
  • 175g no-added-sugar, fat-free strawberry yogurt
  • 500g fresh strawberries
  • 1 level teaspoon of icing sugar, for dusting
